  • 2 cups all-purpose flour (plus a 1/4 cup or so for working with dough)
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon fine sea salt
  • 6 tablespoons cold unsalted butter (cut into small cubes)
  • 1/2 cup chopped strawberries
  • 1 1/4 cup powdered sugar
  • 2 tablespoons fresh-squeezed lemon juice

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together buttermilk and beaten egg.
  3. In another bowl, mix flour, 2 tablespoons sugar, baking powder, and salt.
  4. Add cold butter cubes to the dry mixture and mix until crumbly.

  6. Transfer dough to a floured surface and shape into a 1-inch thick round. Chill for 1 hour.
  7. Cut into wedges and bake for 15-18 minutes until golden brown.
