  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 Tbsp vanilla extract
  • ⅓ cup Christmas jimmies sprinkles
  • 10 oz full-fat cream cheese, softened
  • 13 Tbsp salted butter, softened
  • 1¼ cups powdered sugar

Instructions

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, and salt in a medium bowl; set aside.
  3. In a stand mixer or using a hand mixer, cream together softened butter and sugar until light and fluffy.
  4. Add egg and vanilla extract; mix until combined.
  5. Gradually add dry ingredients to the wet mixture; mix on low speed until just combined.
  6. Gently fold in sprinkles.
  7. Portion dough into balls (about 3 tablespoons each) and place on baking sheets.
  8. Slightly flatten each ball and bake for 9-11 minutes until edges are set but tops remain soft.
  9. Cool on sheets for five minutes before transferring to wire racks.
  10. For frosting: beat cream cheese and salted butter until smooth; gradually add powdered sugar and mix well.
  11. Frost cooled cookies and sprinkle additional jimmies on top.
