  • 4 burrito-sized tortillas
  • 1/2 cup hummus
  • 1 cup spinach
  • 1 yellow bell pepper (cut into strips)
  • 1/2 cucumber (cut into matchsticks)
  • 1/2 cup grated carrots
  • 1/2 cup grated beets
  • 1/4 cup red onion (cut into strips)
  • Juice of 1/2 lemon
  • 4 teaspoons extra-virgin olive oil
  • 4 teaspoons everything bagel seasoning

Instructions

  1. Spread 2 tablespoons of hummus on each tortilla. Layer with baby spinach.
  2. On one half of each tortilla, add the remaining vegetables evenly. Squeeze lemon juice over them and drizzle with olive oil and everything bagel seasoning.
  3. Roll the tortillas tightly from the veggie side, tucking in the edges as you go to secure the filling.
  4. Wrap each veggie roll in wax paper or parchment and refrigerate until ready to serve.
