  • 240g of all-purpose flour
  • 2 tablespoons of caster sugar
  • 1 teaspoon of pumpkin spice
  • 220g of dairy-free block butter (cold and cut into small cubes)
  • Ice-water
  • 100g of pumpkin puree
  • 1 & 1/2 teaspoons pumpkin spice
  • 50g of maple syrup
  • 2 teaspoons of cornstarch
  • Dairy-free milk
  • 100g of icing sugar
  • 1 teaspoon of maple syrup
  • 1/2 teaspoon of pumpkin puree
  • 1/4 teaspoon of pumpkin spice

Instructions

  1. In a bowl, mix flour, sugar, and pumpkin spice. Add cold dairy-free butter and blend until crumbly.
  2. Gradually add ice water until dough forms. Chill for 15 minutes.
  3. Prepare the filling by combining pumpkin puree, maple syrup, cornstarch, and remaining pumpkin spice.
  4. Roll out chilled dough; cut rectangles and fill half with pumpkin mixture. Seal with another rectangle.
  5. Bake at 350°F (180°C) for 20-25 minutes until golden brown.
  6. For icing, whisk together icing sugar, dairy-free milk, maple syrup, pumpkin puree, and pumpkin spice.
