  • 500 g white bread flour
  • 10 g fast action yeast
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 160 ml unsweetened non-dairy milk
  • 160 ml water
  • 75 g raw cashews
  • 2 cloves garlic (peeled)
  • 1 ½ teaspoons tapioca starch
  • ½ teaspoon salt
  • 2 tablespoons nutritional yeast
  • 1 teaspoon cider vinegar
  • 85 g vegan butter
  • 4 cloves garlic (peeled and crushed)
  • 1 tablespoon finely chopped fresh parsley
  • 1 heaped teaspoon dried oregano

Instructions

  1. Combine bread flour, yeast, salt, and sugar in a bowl. Add olive oil, lukewarm non-dairy milk, and water; mix until a rough dough forms.
  2. Knead the dough on an unfloured surface or in a stand mixer until smooth and elastic (5-10 minutes).
  3. Let the dough rise in an oiled bowl for 1-2 hours until doubled in size.
  4. Soak raw cashews in boiling water while the dough rises.
  5. Shape the risen dough into small balls (about 30g each) and let them rise again for 30-40 minutes.
  6. Preheat the oven to 210°C (425°F). Prepare garlic butter by melting vegan butter with crushed garlic and herbs.
  7. Blend soaked cashews with remaining ingredients until smooth; heat until thickened.
  8. Bake dough balls for about 20 minutes until golden brown, brushing with garlic butter before serving.
