  • 1 vanilla bean (split)
  • 220g cake flour
  • 200g granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract
  • 90g browned butter
  • 1 tablespoon canola oil
  • 3 large eggs
  • 160g buttermilk (or kefir)
  • Remaining brown butter
  • 113g cream cheese (or 60g sour cream)
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon fine sea salt
  • 360g powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Brown the butter in a saucepan over medium heat until golden brown and nutty.
  3. In a large bowl, cream together cold unsalted butter, sugar, baking powder, salt, and vanilla bean seeds until smooth.
  4. Add eggs one at a time, mixing well after each addition. Incorporate buttermilk and browned butter into the mixture.
