  • 1 cup creamy peanut butter
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • For serving: chopped green onions, crushed peanuts, and cooked rice or noodles

Instructions

  1. Trim excess fat from the chicken and cut it into bite-sized pieces.
  2. In a bowl, whisk together peanut butter, coconut milk, soy sauce, honey, rice vinegar, ginger, garlic, and red pepper flakes until smooth.
  3. Place chicken pieces in the slow cooker and pour the sauce over them.
  4. Cook on low for 4 to 6 hours or high for 2 to 3 hours until the chicken reaches an internal temperature of 165°F.
  5. Shred the chicken inside the crockpot and mix well with the sauce.
