Ingredients

Scale
  • 2.2 pounds whole chicken legs or thighs (de-skinned and trimmed)
  • 1 tablespoon ginger garlic paste
  • 1¼ cup thick plain yogurt (Greek yogurt works well)
  • 23 teaspoons Kashmiri chili powder
  • 1 tablespoon lemon juice
  • Salt to taste
  • ½ cup mustard oil (or vegetable oil of choice)
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • ¾ teaspoon black salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon cumin powder

Instructions

  1. In a large bowl, mix all marinade ingredients: yogurt, ginger garlic paste, spices, lemon juice, and mustard oil.
  2. Coat the chicken pieces thoroughly with the marinade. Cover and refrigerate for at least 4 hours or overnight for best results.
  3. Choose your preferred cooking method: grill on high heat for that smoky flavor, use an Instant Pot for quick cooking, air fry for a healthier option, or bake in the oven.
  4. Cook until the chicken reaches an internal temperature of 165°F (75°C).
  5. Allow the chicken to rest before serving. Garnish with fresh herbs and serve alongside naan or rice.
