  • 4 cups beef stock

  • 3 medium Yukon gold potatoes (cut into cubes)
  • A bunch of fresh herbs (rosemary, thyme)
  • 2 stalks celery (chopped)
  • 1/4 cup finely chopped yellow onion
  • 2 tablespoons tomato paste
  • 2 tablespoons roast beef base paste
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Season the cubed chuck beef with flour, Worcestershire sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. In a large Dutch oven over medium-high heat, sear the seasoned beef in vegetable oil until golden brown on all sides (about 2 to 3 minutes per side).
  3. Add chopped celery, onions, and minced garlic; sauté until soft (about 5 minutes). Stir in tomato paste and roast beef base paste; simmer for an additional 2-3 minutes.
  4. Pour in beef stock and add fresh herbs. Return seared beef to the pot; cover and simmer on medium-low heat for about 2 hours.
  5. After two hours, add potatoes and carrots; continue cooking on medium-low heat for another 30-45 minutes until tender.
