  • ¼ cup warm water
  • 1 tsp active dry yeast
  • ½ cup warm milk
  • 2 tbsp sugar (plus a pinch)
  • 2 eggs (divided)
  • 4 tbsp butter (divided)
  • 2 ½ cups + 2 tbsp all-purpose flour (plus extra)
  • 1 tsp kosher salt (divided)
  • 2 cups baby arugula
  • 1 cup fresh basil leaves
  • 3 minced garlic cloves (divided)
  • Zest of 1 lemon
  • 150 g boursin cheese
  • ½ cup finely grated parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Activate the yeast by mixing warm water, a pinch of sugar, and yeast; let sit until foamy.
  2. In a stand mixer, combine warm milk, sugar, one beaten egg, melted butter, activated yeast mixture, flour, and half the salt. Mix until combined.
  3. Knead the dough using a dough hook until smooth; add flour if sticky.
  4. Let the dough rise in an oiled bowl covered with cling film for about 1 to 1½ hours.
  5. Prepare the filling by blending arugula, basil, half garlic, lemon zest, remaining salt, pepper, and boursin cheese; chill.
  6. Roll risen dough into three circles; layer with filling and parmesan between each circle.
  7. Cut strips from the outer edge towards the center and twist to form star points.
  8. Allow to rise again on baking sheet for thirty minutes before baking at 350°F for about 25 minutes until golden brown.
  9. Brush with melted garlic butter before serving.
