  • 2 tsp yellow mustard
  • 11 ½ tsp Cajun seasoning
  • 23 dashes hot sauce
  • 1 ½ cups flour
  • 2 large eggs, beaten
  • 2 cups Panko breadcrumbs
  • 2 ½ tsp gumbo file powder
  • Salt & pepper, to taste

Instructions

  1. Prepare the Egg Filling: Scoop the yolks from halved hard-boiled eggs into a bowl. Mash with mayonnaise, pickle relish, mustard, Cajun seasoning, and hot sauce until smooth.
  2. Assemble the Eggs: Fill each egg white half with the yolk mixture using a spoon or piping bag.
  3. Coat and Fry: Set up a breading station with flour, beaten eggs, and Panko mixed with gumbo file powder. Dip filled egg halves in flour, then beaten egg, and finally coat with Panko.
  4. Fry Until Golden: Heat oil in a skillet; fry coated egg halves until golden brown. Drain on paper towels before serving.
