  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (125g each), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons pesto
  • Butter, as required

  2. Spread pesto on one side of each slice of sourdough. Layer with mozzarella, chopped sun-dried tomatoes, and any additional toppings. Top with another slice of sourdough, pesto side down.
