  • 2 boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 1 medium onion (sliced)
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 1 cup sour cream (full-fat)
  • Fresh chopped parsley (optional, to taste)

Instructions

  1. Slice the chicken breasts in half lengthwise for even cooking. Season with garlic powder, salt, and pepper.
  2. Heat olive oil and one tablespoon of butter in a skillet over medium-high heat. Cook the seasoned chicken for 5-6 minutes on each side until golden brown and fully cooked (165°F). Remove from skillet.
  3. In the same skillet, reduce heat to medium and add remaining butter along with sliced onions. Sauté until softened and slightly browned (10-15 minutes).
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth, scraping the bottom of the pan to release flavorful bits. Stir in sour cream until smooth; heat gently.
  6. Return chicken to the skillet and spoon sauce over each piece. Garnish with fresh parsley if desired before serving.
