  • 1 pound boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 onion, diced
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon oregano
  • 1/4 teaspoon allspice
  • 1 teaspoon lemon pepper
  • 1 cup fat-free plain Greek yogurt
  • 2 cloves garlic, minced
  • 1/2 cup grated cucumber
  • 2 tablespoons chopped fresh parsley
  • salt to taste

Instructions

  1. Spray slow cooker with non-stick cooking spray and place chicken inside.
  2. In a bowl, combine garlic, lemon juice, onion, water, olive oil, apple cider vinegar, oregano, allspice, and lemon pepper; pour over chicken.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours until chicken is tender.
  4. While chicken cooks, mix tzatziki ingredients in a separate bowl; refrigerate for at least an hour.
  5. Shred the chicken directly in the slow cooker and serve in warm pita bread with desired toppings.
