  • 2 large lamb shanks
  • 1 large bunch fresh rosemary
  • 8 garlic cloves
  • 2 cinnamon sticks
  • 1 large onion, chopped
  • 4 cups chicken stock
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 3 bay leaves
  • 1 cup fresh plum tomatoes, chopped
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 tbsp apple vinegar
  • 1 large bunch fresh mint and thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Score the fat side of the lamb shanks and season with salt and pepper.
  3. Brown the lamb in olive oil until golden on all sides.
  4. In a Dutch oven, layer half of the rosemary and garlic, place browned lamb shanks on top, then add remaining ingredients.
  5. Pour in chicken stock to cover slightly and cook covered for 2.5 to 3 hours.
  6. Let the lamb rest for 10-15 minutes before serving.
  7. Skim excess fat from the cooking liquid and create a roux with butter and flour to thicken gravy.
  8. Stir in fresh herbs before serving alongside mashed sweet potatoes or crusty bread.
