  • 1 pound breakfast beef and sage sausage (casings removed if necessary)
  • 1/2 cup freshly grated sharp cheddar cheese (omit for dairy-free)
  • 1/2 cup panko breadcrumbs
  • 2 large eggs (divided)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh thyme leaves
  • 1 (17.3-ounce) box puff pastry
  • 2 tablespoons Everything But The Bagel seasoning
  • Hot honey for drizzling

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, mix sausage, cheddar cheese, breadcrumbs, one egg, and thyme until well combined.
  3. Whisk the remaining egg with one tablespoon of water in a separate bowl for the egg wash.
  4. Roll out the puff pastry on a floured surface into a rectangle; cut into strips.
  5. Shape sausage mixture into logs and place down the center of pastry strips.
  6. Brush with Dijon mustard and egg wash before rolling up tightly.
  7. Score the tops and cut into 1½-inch pieces; place seam-side down on baking sheet.
  8. Brush with remaining egg wash, sprinkle with seasoning, and bake for 18-20 minutes until golden brown.
  9. Serve warm drizzled with hot honey and garnished with extra thyme.
