  • 1 box refrigerated pie crust
  • 1 large apple, peeled and chopped into small pieces
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon fresh squeezed lemon juice
  • 1/8 cup sugar
  • 1 teaspoon all-purpose flour
  • 6 store-bought caramels, diced into about 4 pieces each
  • Sprinkle of sea salt
  • 1 large egg (or plant-based milk for vegan)
  • 1 tablespoon water (or substitute with plant-based milk)
  • Sugar in the raw for dusting on top
  • Caramel syrup (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a cookie sheet with parchment paper.
  2. In a bowl, mix chopped apples, lemon juice, flour, sugar, cinnamon, and diced caramels.
  3. Roll out pie crusts and cut into circles using a cookie cutter.
  4. Place half of the circles on the cookie sheet, add the apple mixture on each, sprinkle with sea salt, then cover with remaining circles.
  5. Seal edges with a fork and brush tops with an egg wash (or plant-based milk for vegan).
  6. Sprinkle sugar on top and bake for 12-15 minutes until golden brown.
