  • 120 grams powdered sugar
  • 2 large egg whites (about 65 grams), at room temperature
  • 50 grams granulated sugar
  • 1/4 cup freeze-dried raspberries
  • 3/4 cup fresh or frozen raspberries
  • 2 tbsp granulated sugar (for syrup)
  • 1 tbsp lemon juice
  • 6 tbsp unsalted butter, at room temperature

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together almond meal and powdered sugar; set aside.
  3. Whip egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
  4. Gently fold in the almond mixture until the batter flows like lava.
  5. Pipe rounds onto prepared sheets and let them rest for 30 minutes.
  6. Bake for about 15 minutes until set.
  7. Prepare raspberry syrup by simmering fresh raspberries with sugar and lemon juice; strain.
  8. Beat butter until fluffy, then mix in cooled raspberry syrup.
  9. Assemble by piping raspberry buttercream between macaron shells.
