  • 4 ounces lump crab meat
  • 1/2 pound asparagus
  • 1 pound halibut (cut into two pieces)
  • Salt and pepper
  • 2 tablespoons butter (for topping)
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon melted butter
  • 2 ounces hollandaise sauce

Instructions

  1. Blanch asparagus in boiling salted water for 2-3 minutes until bright green and crisp. Drain and set aside.
  2. In a large skillet over medium heat, melt half a tablespoon of butter. Season halibut with salt and pepper and cook for about 4-5 minutes on each side until golden brown.
  3. Remove halibut from the skillet and keep warm. In the same skillet, sauté crab meat gently with salt and pepper until warmed through, about 1-2 minutes.
  4. Assemble by placing blanched asparagus on each plate, topped with halibut and sautéed crab meat.
  5. For topping, mix panko breadcrumbs with melted butter; sprinkle over each serving and drizzle with hollandaise sauce.
