  • 6 medium potatoes
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 4 hard-boiled eggs
  • 2 tablespoons white distilled vinegar
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons pickle relish
  • Salt and pepper to taste
  • 2 spring onions, sliced
  • 1 teaspoon paprika

Instructions

  1. Scrub, peel, and cut the potatoes into one-inch cubes. Place in a large pot, cover with water, and boil for about 10 minutes until firm-tender. Drain and let cool.
  2. In a large mixing bowl, combine cooled potatoes with chopped onions and celery.
  3. Hard-boil the eggs until fully cooked; cool and peel them. Chop or push through a cooling rack into the potato mixture.
  4. Add white distilled vinegar, mayonnaise, yellow mustard, pickle relish, salt, pepper, spring onions, and paprika to the bowl. Gently mix until well combined.
