  • 1 tbsp olive oil
  • 400g (6) chicken or turkey sausages
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 3 tbsp plain flour
  • 1 liter (4 cups) chicken or vegetable stock
  • 2 bay leaves
  • 100g (1/2 cup) wild rice
  • 3 medium potatoes (peeled and cubed)
  • 375ml (1 1/2 cups) single/light cream
  • Salt to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Remove the sausage from its casing and add it to the pot. Cook until browned and fully cooked, then transfer to a plate.
  2. In the same pot, add chopped onion, celery, and carrots. Cook over low heat for about 10 minutes until softened. Add minced garlic and thyme; cook for an additional 30 seconds.
  3. Sprinkle flour over the vegetable mixture, stirring well until combined into a roux. Gradually pour in chicken stock while stirring until smooth.
  4. Add bay leaves and wild rice, bringing to a simmer for about 30 minutes.
  5. Stir in cubed potatoes and cook for another 15 minutes until tender. Finally, mix in cream and season with salt before serving.
