  • Zest of 1 lemon
  • 1/4 cup vegetable oil
  • 2 large eggs (at room temperature)
  • 1 large egg white (room temperature)
  • 1/2 cup sour cream (at room temperature)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon almond extract
  • 1/2 cup buttermilk (at room temperature)
  • 8 ounces cream cheese (at room temperature)
  • 1 large egg (at room temperature)
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a food processor, pulse the pistachios until finely ground. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, beat softened butter and sugar until light and fluffy. Add lemon zest, eggs, sour cream, and combine well.
  4. Gradually fold in the flour mixture along with the ground pistachios.
  5. Pour batter into the prepared dish and bake for about 25 minutes until lightly golden.
  6. For the topping, beat together cream cheese and egg until smooth; gradually add powdered sugar.
  7. Pour the cream cheese mixture over the baked cake and return to the oven for an additional 30 minutes or until set.
