  • 2 cloves garlic (minced)
  • 3 oz mozzarella cheese (sliced)
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon thyme leaves
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. For the filling, melt unsalted butter in a skillet over medium heat. Sauté sliced mushrooms until golden brown, then add minced garlic and thyme until fragrant.
  2. Stir in fresh spinach until wilted, then mix in mozzarella cheese until melted.
  3. Prepare chicken breasts by slicing them horizontally to create pockets and season with salt and pepper.
  4. Stuff each chicken pocket with the mushroom mixture. Secure with toothpicks if needed.
  5. Heat olive oil in a skillet over medium heat and cook stuffed chicken for 5-7 minutes per side until golden brown.
