  • Coarse sea salt (for sprinkling)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into cubes)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually mix this into the yeast mixture until combined.
  3. Knead the dough by hand or with a stand mixer until smooth.
  4. Add chopped rosemary and grated Parmesan to the dough; form into a ball and let rise in a greased bowl for about an hour.
  5. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the risen dough and divide it into eight pieces. Flatten each piece, place mozzarella in the center, seal it, then twist into pretzel shapes.
  7. Boil water with baking soda in a saucepan; drop each pretzel into the boiling water for about 30 seconds before draining on paper towels.
  8. Brush each pretzel with melted butter, sprinkle with coarse sea salt, and bake for 12-15 minutes until golden brown.
