  • 1 + 1/2 cups blanched almond flour
  • 2 Tbsp coconut flour
  • 1/4 tsp salt
  • 1/4 cup melted coconut oil
  • 1 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup coconut cream
  • 1/2 cup unsweetened almond butter
  • 4 oz dark chocolate chips
  • 1/2 Tbsp peppermint flavoring
  • Shredded coconut
  • Miniature dark chocolate chips
  • Naturally colored sprinkles

Instructions

  1. Prepare a 6" round springform pan by lining it with parchment paper.
  2. In a bowl, mix almond flour, coconut flour, and salt. Stir in melted coconut oil, maple syrup, and vanilla until combined. Press into the bottom of the pan to form the crust.
  3. In a saucepan over low heat, melt dark chocolate chips and coconut cream together, stirring frequently. Once melted, remove from heat and add almond butter and peppermint flavoring until smooth.
  4. Pour the filling over the crust in the pan and refrigerate for at least 4 hours or overnight to set.
  5. Before serving, garnish with shredded coconut, miniature dark chocolate chips, or colorful sprinkles.
