  • 1 cup tomato juice
  • ½ cup ketchup
  • 3 tablespoons lime juice
  • 2 tablespoons Mexican hot sauce
  • ½ cup English cucumber (finely diced)
  • ½ cup white onion (finely diced)
  • ½ cup bell peppers (finely diced)
  • 1 jalapeño (small, seeded and minced)
  • ⅓ cup fresh cilantro leaves (chopped)
  • ½ cup celery (optional)
  • 1 avocado (large, diced; optional)
  • Tostadas or saltine crackers

Instructions

  1. Toss chopped shrimp with 1 tablespoon lime juice and a pinch of salt; set aside.
  2. In a large bowl, whisk together tomato juice, ketchup, remaining lime juice, hot sauce, salt, and black pepper until smooth.
  3. Fold in diced vegetables until coated with sauce.
  4. Gently mix in seasoned shrimp; add more tomato juice if needed to adjust consistency.
  5. Chill for 15–30 minutes to let flavors meld; fold in avocado just before serving.
