  • 2 c. organic baby spinach
  • 2 c. organic mixed leafy greens (including kale & chard)
  • 1/2 c. quartered marinated artichoke hearts
  • 4 oz. fresh mozzarella cheese marinated with extra virgin olive oil & fresh basil
  • 4 oz. olives jubilee (including Calamata, Nicoise, Picholine, & Amfissa)
  • 1 c. organic grape tomatoes
  • 1/2 c. pepperocini
  • 1/2 red onion (thinly sliced)
  • 1 c. water
  • 1/3 c. yellow onion
  • 13 garlic cloves (depending on your taste)
  • 1/4 c. feta cheese
  • 4 tbsp. canola oil
  • 1/4 c. fresh lemon juice
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper

Instructions

  1. In a large bowl, layer the organic baby spinach, mixed leafy greens, marinated artichoke hearts, fresh mozzarella, olives jubilee, grape tomatoes, pepperoncini, and thinly sliced red onion.
  2. To make the creamy dressing, blend water, yellow onion, garlic cloves, feta cheese, canola oil, lemon juice, sea salt, and pepper until smooth.
  3. Drizzle half of the dressing over the salad and toss gently to coat. Adjust dressing to taste.
