  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (gluten-free if desired)
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté the onion and garlic in one tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional 30 seconds.
  2. In a large bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Shape the mixture into eight patties approximately ½ inch thick.
  4. Heat remaining olive oil in a skillet over medium heat. Cook patties for about 5-6 minutes on each side until golden brown and fully cooked.
  5. Drain on paper towels and serve warm with your choice of garnishes or dipping sauces.
