  • 1 cup full-fat Greek yogurt
  • 3 Tablespoons extra virgin olive oil
  • 4 garlic cloves, finely grated or minced
  • Juice of 1 lemon
  • 1 Tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano or thyme
  • Fresh cracked pepper
  • 2 Tablespoons extra virgin olive oil
  • ½ medium yellow or white onion, chopped
  • 2 cups Basmati rice
  • 3 cups chicken broth
  • Kosher salt
  • 1 large cucumber, chopped
  • 4 roma tomatoes or 2 large beefsteak tomatoes, chopped
  • 1 Tablespoon extra virgin olive oil
  • ½ cup loosely packed mint or parsley, chopped
  • Kosher salt and fresh cracked pepper
  • 4 slices naan or pita bread
  • 8 oz. hummus

Instructions

  1. Marinate chicken: In a bowl, combine Greek yogurt, olive oil, garlic, lemon juice, tomato paste, paprika, salt, oregano (or thyme), and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
  2. Cook rice: Sauté chopped onion in olive oil until translucent. Add Basmati rice and stir for 1 minute. Pour in chicken broth, season with salt, bring to a simmer, cover, and cook until fluffy (15-20 minutes).
  3. Grill chicken: Preheat grill over medium-high heat. Remove chicken from marinade and grill each piece for 6-8 minutes per side until cooked through.
  4. Assemble bowls: Start with rice as the base, top with grilled chicken skewers, cucumber chunks, diced tomatoes, and sprinkle fresh herbs.
