  • 2 boneless, skinless chicken breasts
  • 2 cups mushrooms, sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Salt and pepper to taste
  • 1 tablespoon cornstarch

Instructions

  1. In a bowl, whisk together soy sauce and cornstarch until smooth.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add chicken; cook until browned and cooked through (5-6 minutes). Remove from the pan.
  3. In the same skillet, add another tablespoon of oil. Sauté onion and garlic for 1-2 minutes until fragrant. Add mushrooms and bell peppers; stir-fry for another 3-4 minutes until tender-crisp.
  4. Return the chicken to the skillet, pour in the sauce, and toss everything together until coated. Let simmer for an additional 2-3 minutes.
