2 boneless, skinless chicken breasts
2 cups mushrooms, sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium onion, thinly sliced
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon vegetable oil (plus more for cooking)
Salt and pepper to taste
1 tablespoon cornstarch
Instructions
In a bowl, whisk together soy sauce and cornstarch until smooth.
Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add chicken; cook until browned and cooked through (5-6 minutes). Remove from the pan.
In the same skillet, add another tablespoon of oil. Sauté onion and garlic for 1-2 minutes until fragrant. Add mushrooms and bell peppers; stir-fry for another 3-4 minutes until tender-crisp.
Return the chicken to the skillet, pour in the sauce, and toss everything together until coated. Let simmer for an additional 2-3 minutes.
