  • 6 large russet potatoes
  • 1/4 cup unsalted butter
  • 4 oz cream cheese
  • 2/3 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper (to taste)
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cooked and crumbled turkey bacon or crispy chickpeas
  • 1/4 cup diced green onions

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Wash, peel, and dice the russet potatoes into bite-sized pieces. Boil in water until tender, about 15-20 minutes. Drain.
  3. In the same pot, combine warm potatoes with butter, cream cheese, sour cream, and milk until well mixed.
  4. Season with garlic powder, salt, and pepper. Fold in cheddar cheese and bacon (or alternative).
  5. Transfer the mixture to a casserole dish. Top with remaining cheese and bacon (or alternative) before baking for 25-30 minutes until golden.
  6. Once out of the oven, sprinkle with diced green onions and serve warm.
