  • 2 sticks celery (chopped finely)
  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 1 tablespoon lemon juice (or to taste)
  • Salt & pepper (to taste)

Instructions

  1. In a large pot, heat butter and olive oil over medium-high heat. Sauté celery, carrots, and onions for about 5-7 minutes until softened.
  2. Stir in minced garlic and cook for an additional 30 seconds. Add flour and cook for another minute.
  3. Pour in chicken broth, stir to dissolve the flour, then add Italian seasoning and chicken breasts. Bring to a boil, cover slightly open, and simmer for 15 minutes.
  4. Add uncooked orzo and simmer uncovered for another 10 minutes until tender.
  5. Remove chicken, chop into bite-sized pieces, return to the pot, and stir in lemon juice, salt, and pepper to taste.
