  • 2 cups + 2 Tablespoons all-purpose flour

  • 1 cup granulated sugar
  • 2 Tablespoons freshly grated lemon zest
  • ½ cup unsalted butter (melted and slightly cooled)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 Tablespoons freshly squeezed lemon juice
  • ½ teaspoon vanilla extract
  • Additional granulated sugar for rolling cookies in

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and lemon zest until smooth.
  2. In a separate bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, combine melted butter, sugar, eggs, lemon juice, vanilla extract, and lemon zest until well mixed.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Scoop out some dough, place a teaspoon of filling in the center, encase it with more dough, then roll into a ball.
  6. Roll each cookie ball in granulated sugar before baking at 350°F (175°C) for about 12 minutes.
