  • Zest from 3 small or medium lemons (or 2 large lemons)
  • 1 cup unsalted butter, melted
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Melt the butter and let it cool slightly.
  3. In a bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
  4. In another large bowl, mix sugar and lemon zest until combined. Add the cooled butter, egg, egg yolk, and vanilla extract; stir until smooth.
  5. Gradually fold in the dry ingredients until just combined. Gently mix in the blueberries.
  6. Scoop dough into balls (about 2 tablespoons each) and place on the prepared baking sheet.
