  • 2 recipes Homemade Pie Crust (1 for bottom crust and 1 for lattice top)
  • 3 1/2 pounds Honeycrisp apples
  • 1 1/2 pounds Granny Smith apples
  • 2/3 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/3 cup + 1 TB all-purpose flour
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/8 teaspoon salt

Instructions

  1. Prepare pie crusts as per your favorite recipe; chill both for easier handling.
  2. Brush the bottom crust of a pie pan with egg wash and freeze briefly.
  3. Roll out dough for the lattice top into an approximately 11×11-inch rectangle; cut into strips after chilling.
  4. Peel, core, and thinly slice the apples; mix with sugars, flour, lemon juice, and spices in a Dutch oven over medium heat until coated.
  5. Cool apple mixture on a lined baking sheet to prevent sogginess.
  6. Assemble pie by layering cooled apples into chilled bottom crust and weaving lattice top.
  7. Seal edges and brush with egg wash; chill again before baking.
  8. Preheat the oven and bake until golden brown.
