  • 1 tsp baking powder

  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup Greek yogurt
  • 3/4 cup fresh blueberries (to fold in, tossed with 1 tbsp flour)
  • 3/4 cup fresh blueberries (for topping)
  • 6 oz cream cheese, softened
  • 3 tbsp granulated sugar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 3/4 cup powdered sugar
  • 1 1/2 to 2 1/2 tsp milk or cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, brown sugar, and salt for dry ingredients.
  3. In another bowl, whisk melted butter, vegetable oil, egg, vanilla extract, Greek yogurt, and granulated sugar until smooth.
  4. Combine wet and dry mixtures gently; fold in blueberries coated with flour.
  5. For the filling, beat cream cheese with granulated sugar, cornstarch, vanilla extract, powdered sugar, and milk until smooth.
  6. Spoon half of the muffin batter into liners; add cream cheese filling followed by remaining batter and top with fresh blueberries.
  7. Bake for 22 minutes or until golden brown.
