  • 2 tablespoons extra virgin olive oil
  • ⅓ cup soy sauce
  • ⅓ cup water
  • ⅓ cup light brown sugar
  • 1 teaspoon sesame oil
  • 2 teaspoons garlic, minced
  • ½ yellow onion, diced
  • 2 large jalapeno peppers, sliced
  • Sesame seeds for garnish
  • Cooked white rice for serving

Instructions

  1. In a bowl, toss chicken thighs with cornstarch, salt, and pepper until evenly coated.
  2. In another bowl, combine soy sauce, water, brown sugar, sesame oil, and minced garlic.
  3. Heat olive oil in a skillet over medium-high heat; cook chicken until golden brown (about 2-3 minutes per side).
  4. Remove chicken and sauté diced onions and sliced jalapeños in the same skillet for 4-6 minutes.
  5. Return chicken to the skillet and pour in the sauce; simmer for an additional 2-3 minutes.
