  • 2¼ teaspoons active dry yeast
  • 1 tablespoon sugar
  • 1½ teaspoons salt
  • 1 cup warm water (110°F)
  • 3 tablespoons olive oil
  • 4 tablespoons softened butter
  • 3 cloves minced garlic
  • 1½ tablespoons dried Italian herb blend
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a large bowl. Let sit for 5 minutes until foamy.
  2. Add olive oil, 3 cups of flour, and salt to the activated yeast mixture, mixing until shaggy dough forms.
  3. Knead the dough on a floured surface for 6-8 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover, and let rise for about 1 hour until doubled in size.
  5. Mix softened butter with minced garlic and dried herbs to create herb butter.
  6. Roll out the risen dough into a rectangle. Spread herb butter evenly and top with mozzarella, parmesan, and parsley.
  7. Roll tightly from one long side into a log shape, seal the seam, and place seam-side down in a greased loaf pan. Let rise again for 30-45 minutes.
  8. Preheat oven to 375°F (190°C) and bake for 30-35 minutes until golden brown.
