  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 0.5 cup granulated sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a bowl, whisk together brown sugar, flour, salt, cinnamon, nutmeg, and baking powder.
  3. In another bowl, beat softened butter and 1 egg until creamy; stir in vanilla extract and grated carrots.
  4. Combine wet and dry ingredients until just mixed.
  5. For the cream cheese swirl, blend cream cheese with granulated sugar and 1 egg yolk until smooth.
  6. Pour half the batter into the pan; dollop cream cheese mixture on top; add remaining batter and swirl gently.
