  • 3 ½ pounds beef chuck (cut into 1 ½ inch cubes)
  • 3 tablespoons canola oil
  • 2 onions (finely diced)
  • 1 tablespoon tomato paste
  • 4 garlic cloves (minced)
  • ¼ cup all-purpose flour
  • 3 cups beef broth
  • 1 ¼ cups non-alcoholic stout or dark beef broth (divided)
  • 1 ½ tablespoons brown sugar
  • 1 tablespoon fresh thyme
  • 1 pound carrots (cut into 1-inch pieces)
  • 1 ½ pounds Yukon gold potatoes (cut into 1-inch pieces)
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F.
  2. Season the beef chunks with salt and pepper.
  3. In an oven-safe Dutch oven, heat canola oil over medium-high heat. Sauté onions until golden brown, about 20 minutes.
  4. Stir in the tomato paste and minced garlic until fragrant. Sprinkle in flour, stirring to combine, then gradually whisk in beef broth until smooth.
  5. Add half a cup of non-alcoholic stout, brown sugar, and thyme; mix well. Incorporate seasoned beef into the pot, simmering briefly before transferring to the oven.
  6. Roast uncovered for two hours.
  7. Add carrots and potatoes; stir gently. Roast for another hour or until meat is tender.
  8. Adjust seasoning if necessary and garnish with fresh parsley before serving.
