  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon lime juice
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon chili powder (adjust to taste)
  • 4 pieces boneless, skinless chicken thighs
  • Fresh coriander (for garnish)

Instructions

  1. In a bowl, mix coconut milk, soy sauce, brown sugar, garlic, ginger, lime juice, turmeric powder, and chili powder.
  2. Place chicken in a resealable bag; pour marinade over it. Seal and refrigerate for at least 30 minutes.
  3. Heat oil in a skillet over medium heat. Cook marinated chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove chicken; pour reserved marinade into the skillet and simmer for about 5 minutes until thickened.
