  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 4 ounces brie cheese (rind removed)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter (melted)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan over medium heat, add olive oil and fresh cranberries. Cook until they soften and burst, about 5 minutes.
  3. Stir in honey, orange juice, cinnamon, ginger, salt, and pepper; simmer until thickened.
  4. Cut pockets in the chicken breasts without cutting through completely.
  5. Stuff each breast with brie pieces followed by the cranberry mixture; secure openings with toothpicks.
  6. Sear chicken in an oven-safe skillet over medium-high heat until golden brown on both sides.
  7. Combine panko breadcrumbs with melted butter; sprinkle over the stuffed chicken.
