  • ½ cup sour cream
  • 1 cup fresh strawberries (finely chopped)
  • ½ cup strawberry puree (blend fresh strawberries until smooth)
  • 1 cup unsalted butter (softened) for frosting
  • 4 cups powdered sugar for frosting
  • ¼ cup strawberry puree for frosting
  • 1 teaspoon vanilla extract for frosting
  • 2 tablespoons heavy cream (or milk, if needed) for frosting
  • Pinch of salt for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together on high speed until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. In a small bowl, combine the whole milk and sour cream.
  6. Gradually add the dry ingredients to the butter mixture in three additions, alternating with the milk mixture.
  7. Gently fold in the strawberry puree and finely chopped fresh strawberries.
  8. Divide the batter evenly between your prepared pans and smooth out the tops. Bake for about 25–30 minutes or until a toothpick inserted comes out clean.
  9. Allow your cakes to cool in their pans for about 10 minutes before transferring them to wire racks to cool completely.
  10. To prepare the frosting, beat softened butter on high speed until smooth and creamy, around 2 minutes.
  11. Gradually add powdered sugar one cup at a time until fully incorporated.
  12. Pour in strawberry puree and vanilla extract; beat again until combined. If your frosting feels too thick, add heavy cream one tablespoon at a time until you reach that perfect creamy consistency.
  13. Add a pinch of salt to balance sweetness, then beat on high for another couple of minutes until fluffy.
  14. Place one layer of cake on your serving plate. Spread a generous amount of frosting on top before adding the second layer on top. Use any remaining frosting to cover the entire cake as desired.
