  • ¼ cup maple syrup (for frosting)
  • Pinch sea salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 baking pan with coconut oil.
  2. Grate the carrots and place them in a mixing bowl.
  3. In another bowl, mix wet ingredients: eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract.
  4. In a third bowl, combine dry ingredients: oat flour, baking powder, baking soda, spices, and salt.
  5. Blend the wet mixture into the dry ingredients until just combined; do not overmix.
  6. Pour batter into the prepared pan and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow cooling for about 30 minutes before frosting with a mix of dairy-free cream cheese, Greek yogurt, maple syrup, and salt.
