  • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchini
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into bite-sized pieces. Toss with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper in a large baking dish.
  3. Bake the sweet potatoes for about 30 minutes until tender.
  4. In a pan, heat 1 tbsp olive oil over medium heat. Sauté ground turkey with 1 tsp garlic powder, remaining rosemary, salt, and pepper until browned.
  5. Chop zucchini into slices and quarter them for even cooking.
  6. Combine roasted sweet potatoes with browned turkey and chopped zucchini in the baking dish.
  7. Return the dish to the oven for another 10 minutes.
  8. Drizzle with remaining olive oil and top with parmesan cheese before baking for an additional 10 minutes until bubbly.
