  • 3 and 1/2 pounds lamb
  • 1 large head green cabbage, chopped
  • 1/4 cup olive oil
  • 2 onions, finely chopped
  • 5 garlic cloves, grated
  • 15 oz crushed tomatoes
  • 1 teaspoon dried thyme
  • salt to taste
  • black pepper to taste
  • water as needed
  • lemon wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season lamb with salt and pepper, then brown in batches until golden.
  2. Add onions to the pot and sauté for 2-3 minutes until fragrant. Stir in grated garlic.
  3. Return browned lamb to the pot, add crushed tomatoes, salt, pepper, thyme, and water. Cover and simmer on medium heat for about an hour.
  4. After an hour, stir in chopped cabbage lightly seasoned with salt and pepper. Cook for an additional 20 minutes until cabbage is tender.
  5. Taste and adjust seasoning if needed before serving hot with toasted bread and lemon wedges.
