  • 2 lbs beef chuck, cubed
  • 3 tbsp olive oil
  • 1 onion, diced
  • 2 ribs celery, diced
  • 4 carrots, diced
  • 3 garlic cloves, minced
  • ¾ cup dry apple vinegar
  • 6 cups low-sodium beef broth
  • 1 cup pearled barley
  • Fresh thyme
  • parsley
  • salt
  • pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the cubed beef until browned on all sides. Set aside.
  2. In the same pot, sauté onion, celery, and carrots for about 5 minutes until softened. Add minced garlic and cook for another minute.
  3. Deglaze the pot with apple vinegar, scraping up any browned bits from the bottom. Reduce by half.
  4. Return the beef to the pot along with beef broth and fresh thyme. Simmer for about 45 minutes.
  5. Stir in pearled barley and continue to cook for another 45–60 minutes until everything is tender.
  6. Adjust seasoning as needed and garnish with fresh parsley before serving.
