  • 34 tablespoons olive oil
  • 2 cups yellow onions (thinly sliced)
  • 10 cloves garlic (pressed or minced)
  • 1 teaspoon ground turmeric
  • 1 teaspoon seven spice
  • ½ teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 8 cups low sodium chicken stock
  • 1 ¼ cups red lentils (rinsed)
  • 1 ½ cups chopped baby spinach, parsley, cilantro, dill, and mint
  • Lemon wedges (to finish)
  • No knead bread (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté sliced onions until golden brown (16-20 minutes). Reserve some for garnish.
  2. Add minced garlic and sauté briefly until fragrant. Stir in spices: turmeric, ground coriander, cayenne pepper, salt, and pepper.
  3. Bring broth to a boil and add chicken. Lower heat, cover, and simmer for 18-20 minutes until cooked through.
  4. Remove chicken and shred it using two forks.
  5. Add rinsed red lentils to the pot; simmer for 15-20 minutes until tender.
  6. Return shredded chicken to the pot along with chopped greens; stir well.
  7. Adjust consistency with broth if needed; serve hot with lemon wedges and reserved caramelized onions on top.
