Ingredients

Scale
  • 5 lamb loin chops
  • Salt and black pepper
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh thyme (chopped)

Instructions

  1. Remove lamb loin chops from the fridge and let sit for 20-30 minutes to reach room temperature. Pat dry and season generously with salt and pepper.
  2. Heat a cast iron skillet over medium-high heat. Sear the chops fat side down for about 5 minutes until crispy.
  3. Flip the chops to brown both sides, cooking an additional 3 minutes per side.
  4. Lower heat to medium-low, pour off excess fat (leaving some), add butter, minced garlic, and thyme to the pan. Spoon the sauce over the chops as it cooks.
  5. Transfer to a serving dish, drizzle with remaining garlic butter, and serve.
