  • 1 tbsp honey or sugar
  • 2 ½ cups all-purpose flour (or bread flour)
  • 1 tsp salt
  • ¼ cup olive oil
  • 3 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh rosemary or thyme, chopped
  • ¼ cup grated Parmesan (optional)

Instructions

  1. Activate the yeast by mixing warm water, yeast, and honey in a bowl. Let it sit until foamy.
  2. In a large bowl, combine flour and salt.
  3. Add olive oil and the foamy yeast mixture to the flour blend. Stir until a soft dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth.
  5. Place in an oiled bowl, cover, and let it rise in a warm spot for an hour.
  6. Prepare your muffin tin by greasing it.
  7. Divide the risen dough into 12 pieces and shape into balls; place in muffin cups.
  8. Brush half of the garlic butter mixture over each muffin.
  9. Preheat oven to 375°F (190°C) and let the muffins rest for 10 minutes.
  10. Bake for 18-20 minutes until golden brown; brush with remaining garlic butter before serving.
